Melting Moments

What else is there to say about these beautiful biscuits other than, they just melt in your mouth. Growing up my family called them yo-yo's based on appearance, but now i can fully appreciate the name melting moments from the taste. I love how professional these biscuits look and they would make for a perfect gift wrapped up with a bow, as shown below.
When making these biscuits its important to make sure you keep them the same size so you can match then up evenly pressed between the beautiful butter cream filling. I like to add some fresh lemon rind over the top, but icing sugar would look great also.
